Red Lentil Stew

This is the perfect stew to make on a winter day!
Ingredients
- 1 tbsp yellow onion, diced
- 3 cloves garlic, minced
- 1 tsp sea salt
- 2 cups red lentils
- 2 cans light coconut milk
- 4-6 cups water (enough to cover ingredients)
- ½ cup carrot, diced
- ½ cup celery
- 2 cups sweet potato, diced
- 1 tbsp ginger, minced
- 2 tbsp curry powder
- ¼ tsp cayenne
- ½ tsp black pepper
Instructions
- Sauté onion for a couple minutes. Add garlic, salt, and stir to combine.
- Add lentils, coconut milk, water, and remaining ingredients. Cover and bring to boil.
- Stir well and reduce heat to simmer. Cover and cook for 30-45 minutes more until lentils are cooked and creamy.
