Red Lentil Stew


This is the perfect stew to make on a winter day 


1 tbsp yellow onion, diced

3 cloves garlic, minced

1 tsp sea salt

2 cups red lentils

2 cans light coconut milk

4-6 cups water (enough to cover ingredients)

½ cup carrot, diced

½ cup celery 

2 cups sweet potato, diced

1 tbsp ginger, minced

2 tbsp curry powder

¼ tsp cayenne

½ tsp black pepper

  1. Sauté onion for a couple minutes. Add garlic, salt, and stir to combine. 
  2. Add lentils, coconut milk, water, and remaining ingredients. Cover and bring to boil. 
  3. Stir well and reduce heat to simmer. Cover and cook for 30-45 minutes more until lentils are cooked and creamy.
