Creamy Garlic Parmesan Orzo

Creamy Garlic Parmesan Orzo is a quick and comforting side dish that gets ready in no time. This creamy and delicious Orzo recipe is a crowd pleaser and goes perfect with chicken or roasted veggies or just a salad.

Ingredients

  • 2 tsp butter
  • 2 cloves garlic, minced
  • 1 small yellow onion, minced (~1/4 cup)
  • 2 cups broth (chicken or vegetable)
  • 1 cup milk
  • 1/4 tsp garlic granules
  • 1/4 tsp sea salt
  • 1/4 tsp black pepper
  • 1 cup dry orzo pasta
  • 3/4 cup freshly grated Parmesan cheese
  • 2 cups chopped fresh spinach
  • 1/2 cup frozen peas
  • Microgreens —for garnish

Instructions

  1. Melt butter in a large, deep pan over medium-high heat and sauté onion for 5 minutes. Add garlic and sauté until fragrant.
  2. Add milk, broth, salt, pepper and garlic granules. Stir with a whisk to deglaze the pan.
  3. Over medium heat, add the orzo and stir. Once the orzo starts to boil and bubble, reduce heat to low and continue to simmer for 10 minutes, stirring occasionally.
  4. Once the pasta is al-dente or to your ideal softness, remove from heat. Sauce will be thin and thicken as it cools. Add your parmesan cheese, chopped spinach, frozen peas, and fold into the orzo.
  5. Season to taste as desired, garnish with any additional cheese and micro greens if you’d like.
