Roasted Beet Hummus
/Roasted Beet Hummus
This is an excellent variation of hummus and even healthier since it is mainly made of beets. Beets are a great source of iron amongst other things.
It also is very pretty--making a great addition to any salad.
Ingredients:
1/3 cup roasted beets, diced
1 cup garbonzo beans (or a white bean of your choice)
1 tbsp tahini
1 clove garlic, minced
2 tbsp olive oil
2 tbsp fresh lemon juice
Salt & freshly ground pepper to taste
Preheat oven to 350 degrees F. Peel beets and dice them. Place in a baking dish with a little olive oil and sea salt and bake for about an hour--or until tender. Stirring a couple times.
Pureé all the ingredients together in a food processor or blender until smooth. Adjust seasonings to taste.
Serve with mixed greens, raw veggies, or crackers.
