Guacamole is one of my favorite foods of all time. Adding fresh, local corn & tomatoes is the perfect way to incorporate seasonal produce into this delicious dip! Guacamole is very versatile so don’t be afraid to try adding different thing and seasoning to taste!
2 ripe avocados
1 ear of cooked corn, off the cob
1 small tomato, diced
1 clove garlic, minced
½ tsp spike (gourmet natural seasoning)
¼ tsp chili powder
Slice up the avocados so they are in cubes and mash up as much as you prefer.
Add the diced tomato, minced garlic, and corn. Mix up.
Add the seasoning to taste.
Serve with your favorite tortilla chips, such as Garden of Eatin’ (shown in the picture!)
