Citrus Quinoa Salad with Black beans

Quinoa is a complete protein making it an excellent meal choice. This salad pairs nicely with some salad greens, such as mesclun mix. 


1 cup quinoa, rinsed and drained

1 1/2 tsp cumin powder 

1 can (15 oz) black beans, drained and rinsed

1 1/2 tsp grated ginger (or minced)

1 1/2 tsp grated turmeric (or minced)

2 tablespoons balsamic vinegar

Juice of 1 orange--and zest if you choose 

Salt and freshly ground black pepper to taste 


  1. Boil 2 cups of water in a covered pot. Add the quinoa and bring back to boil. 
  2. Reduce the heat to medium-low and simmer for 15-20 minutes, until the water is gone and the quinoa is done. Keep the pot covered. 
  3. Place quinoa in a large bowl and add the cumin, black beans, ginger, turmeric, balsamic vinegar, orange juice. Mix well and season with salt and pepper to taste.
